Licorice Throat Syrup
Licorice flavored, soothes sore throats. In a saucepan combine honey and water. Stir until the mixture is consistency of pancake syrup. Bring slowly to a boil (over a medium heat). Skim off any scum that rises to the surface.Use 1-2 tbsp water to moisten the dried hyssop. Crush the aniseed. Stir both into the honey. Cover and simmer over low heat for 30 minutes. Remove from heat, uncover, and allow to cool. While the mixture is still a little warm, strain into a jar. When completely cooled, screw on the lid. Should keep for 1 week.
You can substitute the aniseed by using licorice root by boiling it in the water first to extract the flavour. It doesn't take long. You can also substitute the water with a strong herbal tea (licorice leaves) for other flavours or remedies. You will have to experiment on how much of the leaves you need to use to get the flavour you want. Remove the leaves/root and use that water in the recipe.
